Ingredients

For the Spaghetti

  • 8 oz (225 g) spaghetti
  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 2 garlic cloves, minced
  • 1 lb (450 g) ground beef or ground turkey
  • 1 packet taco seasoning mix
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup tomato sauce
  • 1/4 cup water

For the Nacho Topping

  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup sliced black olives
  • 1/4 cup sliced jalapeños (optional)
  • 1/4 cup diced green onions
  • 1/2 cup crushed tortilla chips

Optional Garnishes

  • Sour cream
  • Salsa
  • Fresh cilantro

Instructions

Step 1: Cook the Spaghetti

  1. Boil a pot of salted water and cook spaghetti according to package instructions. Drain and set aside.

Step 2: Prepare the Meat Sauce

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté the diced onions until translucent, then add minced garlic and cook for another minute.
  3. Add the ground beef or turkey, breaking it apart as it cooks, until browned.
  4. Stir in the taco seasoning, diced tomatoes, tomato sauce, and water. Simmer for 5-7 minutes until the sauce thickens.

Step 3: Assemble the Nacho Spaghetti

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, mix the cooked spaghetti with the meat sauce. Spread it evenly.
  3. Sprinkle the shredded cheeses over the top.
  4. Add black olives, jalapeños, green onions, and crushed tortilla chips.

Step 4: Bake and Serve

  1. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven and let it cool slightly. Garnish with sour cream, salsa, and fresh cilantro if desired.
